Costa Rica Santiago Natural
Santiago Rojas began farming in 1973 on his farms, totaling about 34 acres. Santiago’s (now in his 70’s) four children now run the farm, carefully processing the natural fruit. This farm has two major challenges: for one, the varietal is Yellow Catuai and ripe cherries can sometimes appear unripe. So, extra care, training and knowledge are required, just for the harvest alone. Additionally, Don Rojas and family process this coffee naturally, which involves carefully turning the coffee, almost constantly during sunlight, for week.
