This coffee has been a long-term relationship for us and Don Francisco and his wife Blanca Nieve who live very high up in the mountains of Jinotega, Nicaragua. Brought to us by our friends at Gold Mountain Coffee Growers, a Washington DC and Nicaragua-based coffee grower and importer. On Finca El Diamante, they produce exceptional quality coffee and leave half of their farm in its natural, forest state to protect spring water that bubbles to the surface. They are at such a high altitude that their coffee is harvested a full two months after the rest of the country’s coffee due to the colder climate and increased cloud cover in their farm’s micro-climate. The cooler climate allows for a longer maturation process of the fruit, producing a complex cup.
In the cup are notes of dark chocolate, lemon and apricot acidity, with an oaky mouthfeel and a sweet finish.
