El Eje (the axis) coffee was sourced from multiple family farms near Risaralda, Colombia, and sent to our partners at Descafecol for decaffeination. Their proprietary process uses a solvent base, a natural byproduct of sugarcane processing, grown farther south, close to the city of Cali. The decaffeination plant uses a patented method to extract ethanol from sugarcane, which grows abundantly in the area. This method is 100% chemical-free, leaving you with only the coffee’s true flavor. So often, for those sourcing decaf, the level of quality is an afterthought, if one at all. Decaffeination is expensive, so in most cases these folks buy the cheapest coffees available. But we believe decaf drinkers are true purists. Caffeine is not the goal; the authentic flavor of the coffee is. We think it should be the best, so we are intent on finding the best lots we can to have them decaffeinated. Taste the true flavor of coffee with natural decaffeination from Colombian sugarcane. This chemical-free process preserves natural coffee flavors while removing over 98% of caffeine. In the cup, that sugar cane (panela) comes through, as does milk chocolate.
